I have one issue with vegan food: people assume it is healthy because it does not contain animal products. Yes, it can be healthy but more often than not, vegan food contains a lot of processed ingredients; processed sugar and processed flour; and of course soy and agave! No worries, I won’t start a discussion about whether or not soy and agave are healthy/unhealthy but these two ingredients are on my personal list of foods I try to avoid.
Case in point: Our favorite health food restaurant in town offered vegan chocolate cake last week. I was excited when I saw it on the menu but when our waiter listed all the ingredients, I was a tad disappointed. Their “healthy” chocolate cake contained refined, bleached flour and processed sugar which, first of all, didn’t stop me from ordering a slice (it’s part of my field study ) but it also inspired me to go home and get to work on my own healthy version of a vegan chocolate cake recipe.
How do I put this without bragging about my own work here…. I guess I can’t! The cake is just that good. I’ve made it three times since my first attempt (which was a home run, too!) and I’ve probably eaten more chocolate cake in the last few days than ever before.
